In hot Eastern countries, it was traditional to offer your guests the hospitality of having the dirt washed off their feet. Usually this service was performed by a servant; for the host to do it was very unusual. Christ performed this ritual Himself as a mark of love and humility. Humility here distinguishes the great from the unusual. Each disciple holds a similar book in his right hand, signifying unity in matters of logos and reason, of doctrine.
